Question: What’s the secret to frosting cakes properly?
Answer: For a perfectly smooth finish, do what bakers call a "crumb coat": after the cake cools, apply a thin coat of frosting over the entire cake, then place the cake in the fridge to let the frosting set. Then, frost as usual — the first coat of frosting will keep the crumbs locked in, so they won't mar the surface of your cake.

Question: What is the proper way to melt Merckens wafers?
Answer: The proper way to melt chocolate is in a double boiler. In the bottom of the first pan you put in enough water so that it doesn't touch the top pan. Put your wafers in the top section of the double boiler. Place the double boiler on the stove and boil the water. Once you see steam coming out of the pot, remove it from the burner and set it aside for 10 minutes. After 10 minutes, take the lid off and start stirring until there aren't any more clumps and the wafers are smooth. (Remember, take the pot off the burner once it starts to steam. If you leave it on the burner, you will be cooking your chocolate and it will clump. Taking it off the heat allows the chocolate to melt.) Your chocolate is now ready to use!

Answer: Paramount crystals are a much needed addition to your kitchen pantry if you love to make candy. It will fix your chocolate from being clumpy in some situations. Water or water products added to Merckens wafers will make your chocolate really hard to use. If you accidently get water in your chocolate, a pinch or two of paramount crystals will most likely fix your problem.
